You are looking at the farm crew trimming onion seedling leaves. Cutting the tops of young onion plants stimulates stronger root and thicker stem development and makes transplanting much easier. Those two greenhouse tables are holding ten different varieties (about one acre’s worth of onion transplants) which will grow into just over 61,000 individual onions and could weigh up to 30,000 pounds at harvest time.
