Week #22, what a Halloween!

Crop Highlights

Rainbow Kale: This Rainbow Lacinato is another variety bred by Wild Garden Seed company, and it coincidentally fits in great with this week’s colorful rainbow share. Like other brassicas, kale is frost tolerant and tastes sweeter after a frost (we got our first frost Monday night/Tuesday morning when it dropped into the 30s). Some plants experience freeze damage because the water in their cells expand while turning into ice, rupturing their cell walls. Other plants, like kale, produce more sugars when the temperature drops, and since sugar water freezes at a lower temperature than water, the water in the cells does not freeze and the cell walls remain intact. Thanks, kale!

Colorado Rose Potatoes: These red-skinned, white-fleshed potatoes were bred in Colorado’s San Luis Valley. They are firm and keep their shape when cubed and used in soups or stir fries, but they are also delicious mashed! 
 
Spaghetti Squash: This is our first year growing spaghetti squash, and what a success! This type of squash grew popular with Americans in the 1980s, and is still a very common one today. Slice it in half lengthwise, scoop out the seeds, rub some olive oil and salt on it, and bake it face down with a bit of water in the pan. Then scrape it all the way down to the skin with a fork, and have yourself a little bowl of spaghetti.
